Snack Sensation

 

Directions:

  1. Slice meats to 2 mil. in thickness.
  2. Cut smoky cheese into triangle shapes about 2 mil. in thickness.
  3. Cut different cheeses into 1/2" squares about 2 mil. thick.
  4. Arrange cheese and meat slices as shown in photo, starting with summer sausage, then smoky cheese, hard salami and variety of cheeses.
  5. Make a bed of leaf lettuce in center of tray for cheese ball or cheese cubes.
  6. Add garnish-radishes work well.

 

Small 12" Tray, 20-24 Servings

    18 oz. summer sausage
    8 oz. hard salami
    8 oz. of four varieties of Brewster cheeses
    8 oz., or two slices, of Brewster smoky cheese
    8 oz. cheese ball or Brewster cheese cubes
    1/2 Brewster gouda cheese
    leaf lettuce and radishes for garnish

Medium 16" Tray, 26-30 Servings

    25 oz. summer sausage
    10 oz. hard salami
    10 oz. of four varieties of Brewster cheeses
    10 oz. Brewster smoky cheese
    12 oz. cheeseball or Brewster cheese cubes
    1 Brewster gouda cheese
    leaf lettuce and radishes for garnish

Large 18" Tray, 36-40 Servings

    32 oz. summer sausage
    12 oz. hard salami
    12 oz. of four varieties of Brewster cheeses
    12 oz. Brewster smoky cheese
    16 oz. cheeseball or Brewster cheese cubes
    1 Brewster gouda cheese
    leaf lettuce and radishes for garnish
